Eat your Colors- Scout it Out

There is so much bounty in the earth. If you have ever seen an apple tree or a blueberry bush like I have, you know there is always plenty of food available for us and the birds. The earth mother Gaia Calliope is so giving and abundant. Let’s look by season at what is good to eat for our hungry bellies.

Summer- nectarines, peaches, cherries, watermelon, plums, grapes, strawberries, cantaloupes, honey dew, canary melons, apricots, romaine lettuce, potatoes, sweet potatoes, brown rice, tofu, tempeh, vegetarian hot dogs, parsley, mushrooms, eggplant, tomatoes, zucchini, yellow squash, cucumbers, corn, peas, carrots, greens, veggie burgers

Fall- peppers, acorn squash, butternut squash, apples, pears, pumpkins, potatoes, brown rice, tofu, lentils, peanuts, sesame seeds, bananas, mushrooms, lettuce, eggplant

Winter- oranges, tangerines, clementines, mandarin oranges, strawberries, pears, mushrooms, bananas, brown rice, potatoes, tofu, tempeh, vegetarian meatballs and sausages, carrots, corn, peas, butter beans, dried beans, lentils, mung beans, cilantro, nuts in shells, pomegranates, lady apples, grapefruit, onions
